Pork & Kale Pasta Bake

A comforting pasta meal that will get the stamp of approval from the whole family. Packed full of kale, it may seem like too much for your pan at first, but keep stirring and it will condense as the kale wilts. It’s like magic, but with more cheese and less rabbits.

Ingredients
  

  • 1 lb penne pasta or whatever tube pasta you’ve got lurking
  • 1 lb ground pork the hero of this story
  • 1 Tbsp Italian seasoning
  • Red pepper flakes add with confidence, remove with tears
  • 28 oz marinara Pro tip: Rao’s marinara is chef’s kiss
  • 1/4 cup milk makes everything creamier and friendlier
  • 1 Tbsp butter because we’re not monsters
  • 2 cups kale chopped (it looks like a lot—trust the process)
  • 1 1/2 cups mozzarella
  • 1/2 cup panko breadcrumbs
  • 1-2 Tbsp olive oil
  • Salt & pepper

Method
 

  1. Preheat oven to 450°F. Bring a medium pot of water to a boil. We’re starting hot and staying hot.
  2. Wash and dry kale, chop roughly and discard any large ribs. Those thick stems are the enemy of good pasta vibes. Get rid of them.
  3. Once water boils, add penne to pot. Cook according to package directions because pasta companies know what they’re doing. Drain and set aside.
  4. Meanwhile, heat a drizzle of olive oil in a large cast iron or ovenproof pan. Cast iron makes everything taste better—it’s science. Add pork and cook, breaking meat up into pieces until browned and cooked through, about 5-6 minutes. Season with salt, pepper, Italian seasoning, and red pepper flakes. Make it taste like it has personality.
  5. Drain any excess fat from pan. We want flavor, not a grease swimming pool. Add marinara, milk, and butter to pan with pork and stir to combine. This is where the magic sauce happens.
  6. Bring to a simmer and stir in kale until wilted, about 2-3 minutes. Watch it shrink down like it’s been deflated. Stir cooked pasta into sauce. Everything’s coming together now.
