Chicken Caesar Pasta Salad

This isn't your basic pasta salad. We're talking Caesar salad that grew up and became an actual meal. Tender pasta, crispy romaine, seasoned chicken, bacon bits, and creamy Caesar dressing come together for summer perfection. It's the hyperfixation meal you didn't know you needed, perfect for hot days when you want something satisfying but not heavy.

Ingredients
  

  • 3 cups romaine lettuce diced (the sturdy stuff, not the wilty leaves)
  • 8 oz bow tie pasta or rotini, penne, whatever pasta with texture you've got
  • 2 cups chicken breast seasoned, cooked, and diced (rotisserie chicken is your best friend here)
  • 4 slices bacon cooked crispy and chopped
  • 8 oz Caesar dressing or Trader Joe's Caesar salad dip if you can find it, game changer

Method
 

  1. Pasta perfection. Cook your bow tie pasta according to package directions until al dente. Nobody likes mushy pasta salad. Drain and rinse with cold water until it's completely cool. This step is crucial, hot pasta will wilt your lettuce and make everything sad.
  2. Prep your players. While the pasta cooks, dice your romaine lettuce into bite-sized pieces. If you're cooking fresh chicken, season it well with salt, pepper, and maybe some garlic powder, then cook until done and dice it up. If you're using rotisserie chicken (smart choice), just shred or dice it. Cook your bacon until crispy and chop it into bite-sized pieces.
  3. The grand assembly. In a large bowl, combine the cooled pasta, diced romaine, chicken, and bacon pieces. Add the Caesar dressing and toss everything together until well coated. You want every piece of pasta and lettuce to get some of that creamy Caesar goodness.
  4. Taste and adjust. Give it a taste and see if you need more dressing, salt, or pepper. Sometimes you need a little extra dressing if your pasta was really thirsty.
  5. Chill time (optional but recommended). This is great right away, but it's even better after sitting in the fridge for an hour or two. The flavors meld together and everything gets properly acquainted.
  6. Serve and watch it disappear. Serve it up and prepare for everyone to ask for the recipe. It's that good and that simple.
