Ingredients
  

  • 9 oz chorizo Mexican or Spanish, your choice
  • 8 eggs
  • 12 oz shredded cheddar cheese plus extra for sealing
  • 24 oz frozen potatoes with onions and red peppers or tater tots, hash browns, whatever you've got
  • 2 tbsp butter
  • 8 flour burrito tortillas the bigger the better
  • Salt and pepper to taste
  • Splash of water for the eggs

  1. Get those potatoes going. Add your frozen potato mix to the air fryer or a frying pan and cook according to package directions. We want them golden and crispy, not sad and limp. This usually takes about 10-12 minutes, but follow your package instructions.
  2. Chorizo time. While the potatoes cook, fry your chorizo in a pan until it's properly crispy. Don't rush this step—crispy chorizo is the difference between good burritos and life-changing burritos. Break it up as it cooks so you get nice, bite-sized pieces.
  3. Scramble like you mean it. Beat your eggs with salt, pepper, and a splash of water (this makes them fluffier, trust me). Pour the eggs over the crispy chorizo and scramble everything together until the eggs are fully cooked but still creamy. The chorizo will flavor the eggs as they cook—this is where the magic happens.
  4. Assembly line time. Lay out all your tortillas. Add a good handful of shredded cheese to the bottom third of each tortilla—this creates a melty base that holds everything together. Top with your chorizo and egg mixture, then add the crispy potatoes.
  5. Roll like a pro. Fold the bottom edge over the filling, fold in the sides, then roll tightly from bottom to top. Add a small amount of cheese to the seam—this will melt and seal your burrito shut. It's like edible glue, but better.
  6. Crispy exterior magic. Melt butter in a pan over medium heat. Cook burritos seam-side down first until golden and crispy (about 2-3 minutes), then flip and crisp the other side. This seals the deal and gives you that perfect texture contrast.
  7. Storage solutions. Let them cool completely, then wrap individually in parchment paper for freezing. If you have a vacuum sealer, even better—they'll last longer and taste fresher when reheated.
  8. Reheating perfection. From frozen: microwave for 2-3 minutes until heated through, then finish in a pan to crisp up both sides again. This two-step process gives you the best texture—hot and melty inside, crispy outside.
